Game Products

Emu - a tantalising new taste in deep red meat.....a low cholesterol, low fat, heart-healthy, extremely tender meat to temp tastebuds, safeguard health and flatter waistlines.Farmed in a natural environment produces Emu's distinctively flavoured, delicately textured meat. Emu meat's tenderness and superb texture mean that any cut can be lightly grilled, baked or prepared in any way complimentary to exotic meat. The extreme leanness requires that Emu must never be over cooked. The meat is cooked when meat juices rise.

Kangaroo - Kangaroo meat is consistently very lean and has very little cholesterol, and is free of chemical residues. It is a very tender meat but must not be over cooked. It can be served in a number of ways, being complimented by native fruit and berry sauce.

Wallaby - The veal of Kangaroo. 

Buffalo - in recent years a farmed animal due to the culling of wild herds. An excellent meat for eating with a slightly stronger flavour than beef.  Delicious especially when marinated using a red wine and native herbs base, and cooked until the juices rise in a Webber. Delicious as a smoked meat.

Camel - The new game meat available, which was first slaughtered for human consumption in 1988. Camel is another meat with considerably less fat content but comparable protein to beef, and endorsed by the National Heart Foundation as a health food.  This paler red game meat can be cooked in similar ways to beef steaks, and is delightful barbequed and served with red wine and bush tomato glaze.

Crocodile - Crocodile meat, which is similar in colour to chicken, is equivalent to beef in protein, but lower in fat. Body meat is suitable for stir-fry or casserole, and the boneless tail meat can be used for the more exotic dishes, being sure not to over cook.

Goat - Tender, lean and tasty

Rabbit - Farmed Rabbits - plump and moist

Game Birds - Pheasant - Guinea Fowl - Quail - Pigeon - all in this category. They have a stronger more distinct game flavour. Game Birds should be hung to enhance the flavour and tenderness. Young game birds are best roasted or grilled while older birds are more flavoursome when casseroled.
